Roasted Chicken with Potatoes and Carrots

Ingredients:

-1 whole chicken
-2 pounds potatoes, cut into 1-inch cubes
-4 large carrots, cut into 1-inch pieces
-2 tablespoons olive oil
-1 teaspoon garlic powder
-1 teaspoon dried oregano
-1 teaspoon dried thyme
-Salt and pepper, to taste

Instructions:

1. Preheat oven to 400 degrees F.

2. Place chicken in a roasting pan.

3. In a large bowl, combine potatoes, carrots, olive oil, garlic powder, oregano, thyme, salt, and pepper. Toss to combine.

4. Place potato and carrot mixture around the chicken in the roasting pan.

5. Roast for 45 minutes, or until the chicken is cooked through and the potatoes and carrots are tender.

6. Serve hot. Enjoy!
