Roasted Chicken with Potatoes and Carrots
Ingredients:
- 2 lbs. chicken thighs
- 2 lbs. potatoes, cut into 1-inch cubes
- 2 lbs. carrots, cut into 1-inch pieces
- 2 tablespoons olive oil
- 2 teaspoons garlic powder
- 2 teaspoons paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions:
1. Preheat oven to 375°F.
2. In a large bowl, combine potatoes, carrots, olive oil, garlic powder, paprika, oregano, thyme, salt, and pepper. Toss to combine.
3. Place chicken thighs in a large baking dish. Top with the potato and carrot mixture.
4. Roast in preheated oven for 45 minutes, or until chicken is cooked through and potatoes and carrots are tender.
5. Serve and enjoy!
