Garlic Herb Steak and Roasted Vegetables

Ingredients:

-2 steaks
-2 potatoes, cut into cubes
-2 carrots, cut into cubes
-2 cloves garlic, minced
-2 tablespoons olive oil
-2 tablespoons fresh herbs (such as rosemary, thyme, oregano, or a combination)
-Salt and pepper to taste

Instructions:

1. Preheat oven to 400°F.

2. In a large bowl, combine potatoes, carrots, garlic, olive oil, herbs, salt, and pepper. Mix until vegetables are evenly coated.

3. Spread vegetables on a baking sheet and roast in preheated oven for 25 minutes, stirring once halfway through.

4. Meanwhile, heat a large skillet over medium-high heat. Season steaks with salt and pepper. Add steaks to skillet and cook for 4-5 minutes per side, or until desired doneness is reached.

5. Serve steaks with roasted vegetables. Enjoy!
