Roasted Chicken and Vegetables

Ingredients:

- 2 pounds of chicken thighs
- 2 large potatoes, cut into cubes
- 2 large carrots, cut into cubes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- Salt and pepper, to taste

Instructions:

1. Preheat oven to 375°F.

2. In a large bowl, combine chicken, potatoes, carrots, olive oil, garlic powder, onion powder, oregano, salt, and pepper. Toss to combine.

3. Transfer chicken and vegetables to a baking dish.

4. Bake for 30-35 minutes, or until chicken is cooked through and vegetables are tender.

5. Serve and enjoy!
