Roasted Chicken and Vegetables

Ingredients:

- 2 lbs chicken thighs
- 2 lbs potatoes, cut into wedges
- 2 cups carrots, cut into chunks
- 2 tablespoons olive oil
- 2 teaspoons garlic powder
- 2 teaspoons dried oregano
- 2 teaspoons paprika
- Salt and pepper to taste

Instructions:

1. Preheat oven to 400 degrees F.

2. In a large bowl, combine potatoes, carrots, olive oil, garlic powder, oregano, paprika, salt, and pepper. Toss to combine.

3. Place chicken thighs in a large baking dish. Top with the vegetable mixture.

4. Bake for 45 minutes, or until chicken is cooked through and vegetables are tender.

5. Serve and enjoy!
