Shepherd's Pie
Ingredients:
- 2 cups of left over roast lamb, diced
- 4 cups of mashed potatoes
- 2 cups of cooked carrots, diced
- 1/2 cup of grated cheese
- 2 tablespoons of butter
- 1/2 cup of milk
- Salt and pepper, to taste
Instructions:
1. Preheat oven to 375 degrees Fahrenheit.
2. In a medium bowl, combine the diced roast lamb, cooked carrots, and grated cheese.
3. In a separate bowl, mix together the mashed potatoes, butter, and milk.
4. Grease a 9x13 inch baking dish with butter or cooking spray.
5. Spread the lamb and carrot mixture in the bottom of the baking dish.
6. Spread the mashed potatoes over the top of the lamb and carrot mixture.
7. Sprinkle with salt and pepper, to taste.
8. Bake in preheated oven for 25-30 minutes, or until the top is golden brown.
9. Serve warm. Enjoy!
