Roasted Chicken and Vegetables

Ingredients:

- 2 pounds of chicken thighs
- 2 potatoes, diced
- 2 carrots, diced
- 2 tablespoons of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1 teaspoon of paprika
- Salt and pepper to taste

Instructions:

1. Preheat oven to 375 degrees F.

2. In a large bowl, combine the diced potatoes and carrots. Drizzle with olive oil and season with garlic powder, onion powder, paprika, salt, and pepper. Toss to coat.

3. Place the chicken thighs in a large baking dish. Arrange the potatoes and carrots around the chicken.

4. Bake in preheated oven for 40-45 minutes, or until chicken is cooked through and vegetables are tender.

5. Serve and enjoy!
