Roasted Chicken and Veggies
Ingredients:
-2 lbs. chicken thighs
-2 lbs. potatoes, cut into 1-inch cubes
-2 cups carrots, cut into 1-inch pieces
-1/4 cup olive oil
-2 tsp. garlic powder
-1 tsp. dried oregano
-1 tsp. dried thyme
-1 tsp. salt
-1/2 tsp. black pepper
Instructions:
1. Preheat oven to 400°F.
2. In a large bowl, combine potatoes, carrots, olive oil, garlic powder, oregano, thyme, salt, and pepper. Toss to coat.
3. Place chicken thighs in a large baking dish. Arrange the potato and carrot mixture around the chicken.
4. Bake for 40-45 minutes, or until chicken is cooked through and vegetables are tender.
5. Serve hot. Enjoy!
