Roasted Chicken with Potatoes and Carrots
Ingredients:
-2 pounds boneless, skinless chicken breasts
-2 pounds potatoes, peeled and cut into 1-inch cubes
-2 cups carrots, peeled and cut into 1-inch pieces
-3 tablespoons olive oil
-1 teaspoon garlic powder
-1 teaspoon dried oregano
-1 teaspoon dried thyme
-Salt and pepper, to taste
Instructions:
1. Preheat oven to 400°F.
2. Place chicken, potatoes, and carrots in a large bowl. Drizzle with olive oil and season with garlic powder, oregano, thyme, salt, and pepper. Toss to combine.
3. Transfer the mixture to a large baking dish.
4. Bake for 30-35 minutes, or until chicken is cooked through and potatoes and carrots are tender.
5. Serve and enjoy!
