Roast Rib of Beef with Potatoes and Carrots

Ingredients:

- 1 rib of beef
- 2 pounds of potatoes, peeled and cut into cubes
- 2 pounds of carrots, peeled and cut into cubes
- 2 tablespoons of olive oil
- 2 teaspoons of garlic powder
- 2 teaspoons of dried oregano
- 2 teaspoons of dried thyme
- Salt and pepper to taste

Instructions:

1. Preheat oven to 350 degrees Fahrenheit.

2. Place the rib of beef in a roasting pan.

3. In a large bowl, combine the potatoes, carrots, olive oil, garlic powder, oregano, thyme, salt, and pepper. Mix until all ingredients are evenly distributed.

4. Place the potato and carrot mixture around the rib of beef in the roasting pan.

5. Roast in the preheated oven for 1 hour and 15 minutes, or until the beef is cooked through and the potatoes and carrots are tender.

6. Serve the roast rib of beef with the potatoes and carrots. Enjoy!
