Pan-Fried Silverside Salmon Joint with Roasted Potatoes and Carrots
Ingredients:
• 1 silverside salmon joint
• 2 potatoes, peeled and cut into wedges
• 2 carrots, peeled and cut into chunks
• 2 tablespoons olive oil
• Salt and pepper, to taste
Instructions:
1. Preheat oven to 400°F (200°C).
2. Place the potatoes and carrots in a roasting pan. Drizzle with olive oil and season with salt and pepper. Toss to combine.
3. Roast in the preheated oven for 25 minutes, or until the vegetables are tender.
4. Meanwhile, heat a large non-stick skillet over medium-high heat. Add the salmon joint and cook for 4-5 minutes per side, or until golden brown and cooked through.
5. Serve the salmon joint with the roasted potatoes and carrots. Enjoy!
