Roasted Chicken and Vegetables

Ingredients:

- 2 pounds chicken thighs
- 2 pounds potatoes, cut into 1-inch cubes
- 2 cups carrots, cut into 1-inch pieces
- 2 tablespoons olive oil
- 2 teaspoons garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper, to taste

Instructions:

1. Preheat oven to 375 degrees F.

2. Place chicken, potatoes, and carrots in a large bowl. Drizzle with olive oil and season with garlic powder, paprika, oregano, salt, and pepper. Toss to combine.

3. Transfer the mixture to a large baking dish. Bake for 45 minutes, stirring once halfway through, or until chicken is cooked through and vegetables are tender.

4. Serve hot. Enjoy!
