Roasted Chicken and Vegetables
Ingredients:
- 2 lbs. chicken thighs
- 2 lbs. potatoes, peeled and cut into 1-inch cubes
- 2 lbs. carrots, peeled and cut into 1-inch cubes
- 2 tablespoons olive oil
- 2 teaspoons garlic powder
- 2 teaspoons dried oregano
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions:
1. Preheat oven to 425 degrees F.
2. In a large bowl, combine the potatoes, carrots, olive oil, garlic powder, oregano, salt, and pepper. Toss to coat.
3. Spread the vegetables in an even layer on a large baking sheet.
4. Place the chicken thighs on top of the vegetables.
5. Roast in the preheated oven for 30-35 minutes, or until the chicken is cooked through and the vegetables are tender.
6. Serve warm. Enjoy!
