Roasted Chicken and Vegetables
Ingredients:
-2 pounds boneless, skinless chicken breasts
-2 pounds potatoes, peeled and cut into 1-inch cubes
-2 cups carrots, peeled and cut into 1-inch pieces
-2 tablespoons olive oil
-1 teaspoon garlic powder
-1 teaspoon onion powder
-1 teaspoon dried oregano
-1 teaspoon dried thyme
-1 teaspoon dried basil
-Salt and pepper, to taste
Instructions:
1. Preheat oven to 375°F.
2. In a large bowl, combine potatoes, carrots, olive oil, garlic powder, onion powder, oregano, thyme, basil, salt, and pepper. Toss to combine.
3. Place chicken breasts in a large baking dish. Top with the potato and carrot mixture.
4. Bake for 45 minutes, or until chicken is cooked through and vegetables are tender.
5. Serve and enjoy!
