Bacalhau and Potato Gratin
Ingredients:
- 1 lb. bacalhau, soaked and flaked
- 2 lbs. potatoes, peeled and thinly sliced
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/2 cup white wine
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cup grated Parmesan cheese
Instructions:
1. Preheat oven to 375°F.
2. Grease a 9x13 inch baking dish with olive oil.
3. In a large bowl, combine the bacalhau, potatoes, onion, garlic, olive oil, white wine, parsley, oregano, salt, and pepper. Mix until everything is evenly combined.
4. Pour the mixture into the prepared baking dish and spread it out evenly. Sprinkle the Parmesan cheese over the top.
5. Bake in preheated oven for 45 minutes, or until the potatoes are tender and the top is golden brown.
6. Serve hot. Enjoy!
