Scrambled Egg and Potato Hash
Ingredients:
- 2 eggs
- 2 potatoes, peeled and diced
- 1 onion, diced
- 2 tablespoons butter
- Salt and pepper to taste
Instructions:
1. Heat a large skillet over medium-high heat and add the butter.
2. Once the butter has melted, add the diced potatoes and onion. Cook, stirring occasionally, until the potatoes are golden and the onion is softened, about 8-10 minutes.
3. Crack the eggs into the skillet and stir to combine with the potatoes and onion.
4. Cook, stirring occasionally, until the eggs are scrambled and cooked through, about 5 minutes.
5. Season with salt and pepper to taste and serve. Enjoy!
