Scrambled Egg and Potato Hash

Ingredients:

- 2 large eggs
- 2 large potatoes, peeled and diced
- 1 small onion, diced
- 2 tablespoons butter
- Salt and pepper to taste

Instructions:

1. Heat a large skillet over medium-high heat.

2. Add the butter and let it melt.

3. Add the diced potatoes and onion and cook for about 5 minutes, stirring occasionally.

4. Crack the eggs into a bowl and whisk until combined.

5. Pour the eggs into the skillet and stir to combine with the potatoes and onion.

6. Cook for about 5 minutes, stirring occasionally, until the eggs are cooked through.

7. Season with salt and pepper to taste.
