Hash Brown Egg Bake
Ingredients:
- 2 cups shredded potatoes
- 1/2 cup diced onion
- 2 tablespoons olive oil
- 6 eggs
- Salt and pepper to taste
Instructions:
1. Preheat oven to 375°F.
2. In a large bowl, combine potatoes, onion, olive oil, salt, and pepper.
3. Spread the mixture into a greased 9x13-inch baking dish.
4. Bake for 20 minutes or until potatoes are tender.
5. Crack the eggs over the top of the potatoes and bake for an additional 10 minutes or until the eggs are cooked through.
6. Serve warm. Enjoy!
