Chicken and Clam Chili

Ingredients:

- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 cloves garlic, minced
- 1 large tomato, diced
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup dry white wine
- 2 cups chicken broth
- 1/2 pound bacon, diced
- 2 cups canned clams, drained and chopped
- 2 cups arugula, chopped

Instructions:

1. Heat the olive oil in a large pot over medium-high heat.

2. Add the chicken cubes and cook until lightly browned, about 5 minutes.

3. Add the garlic, tomato, chili powder, salt, and pepper and cook for another minute.

4. Pour in the white wine and chicken broth and bring to a boil.

5. Reduce the heat to low and simmer for 10 minutes.

6. Add the bacon and clams and simmer for another 5 minutes.

7. Add the arugula and cook for another minute.

8. Serve hot.
