Curried Chicken and Rice

Ingredients:

- 2 cups of cooked white rice
- 2 boneless, skinless chicken breasts, cut into cubes
- 2 potatoes, peeled and cubed
- 1 cup of corn
- 2 tablespoons of curry powder
- 2 tablespoons of olive oil
- Salt and pepper to taste

Instructions:

1. Preheat oven to 375 degrees F.

2. In a large bowl, combine the cubed chicken, potatoes, corn, curry powder, olive oil, salt, and pepper. Mix until everything is evenly coated.

3. Spread the mixture onto a baking sheet and bake for 25 minutes, stirring halfway through.

4. Meanwhile, cook the rice according to package instructions.

5. Once the chicken and vegetables are cooked through, add them to the cooked rice and stir to combine.

6. Serve the curried chicken and rice warm. Enjoy!
