Curried Rice with Leeks
Ingredients:
- 2 cups of white rice
- 2 leeks, thinly sliced
- 2 tablespoons of butter
- 2 teaspoons of curry powder
- 2 cups of water
Instructions:
1. In a large pot, melt the butter over medium heat.
2. Add the leeks and cook until softened, about 5 minutes.
3. Add the curry powder and stir to combine.
4. Add the rice and stir to coat with the butter and spices.
5. Add the water and bring to a boil.
6. Reduce heat to low, cover, and simmer for 20 minutes, or until the rice is cooked through.
7. Serve hot. Enjoy!
