Prosciutto and Mushroom Scallop Salad

Ingredients:

- 4 ounces of prosciutto, thinly sliced
- 8 ounces of mushrooms, sliced
- 8 ounces of scallops
- 2 tablespoons of olive oil
- 2 tablespoons of lemon juice
- 2 tablespoons of almond milk
- 2 tablespoons of chopped fresh basil
- 2 cups of arugula
- Salt and pepper to taste

Instructions:

1. Heat a large skillet over medium heat.

2. Add the prosciutto and mushrooms to the skillet and cook for 5 minutes, stirring occasionally.

3. Add the scallops to the skillet and cook for an additional 3 minutes, stirring occasionally.

4. In a small bowl, whisk together the olive oil, lemon juice, almond milk, and basil.

5. Add the arugula to the skillet and toss to combine.

6. Pour the dressing over the salad and toss to combine.

7. Season with salt and pepper to taste.

8. Serve immediately. Enjoy!
