Make Protein-Packed Chicken and Rice Casserole

Ingredients:
- 1 cup rice
- 1 lb chicken breast, diced
- 2 eggs
- 1 cup shredded cheese
- 1 scoop whey protein powder
- 1 ripe banana, mashed
- 1/2 cup oats
- 1 cup milk
- 1 can beans, drained and rinsed
- Assorted vegetables (e.g. bell peppers, broccoli, carrots)
- 2 cloves garlic, minced
- 1 tomato, diced
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Cook the rice according to package instructions and set aside.
3. In a large mixing bowl, combine the diced chicken, eggs, shredded cheese, whey protein powder, mashed banana, oats, and milk. Mix well to combine.
4. Add in the cooked rice, beans, assorted vegetables, minced garlic, and diced tomato. Stir until everything is evenly distributed.
5. Transfer the mixture to a casserole dish and spread it out evenly.
6. Cover the dish with foil and bake in the preheated oven for 30 minutes.
7. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden brown and the chicken is cooked through.
