Pumpkin Carrot Walnut Stir-Fry
Ingredients:
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup pumpkin purée
- 2 carrots, peeled and sliced
- 1 zucchini, sliced
- 1/2 cup walnuts, chopped
- Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the garlic and cook for 1 minute.
3. Add the pumpkin purée, carrots, zucchini, and walnuts. Cook, stirring occasionally, for 5 minutes.
4. Season with salt and pepper, to taste.
5. Serve warm. Enjoy!
