Pumpkin Chicken Fried Rice
Ingredients:
- 2 cups cooked white rice
- 1 cup diced cooked chicken
- 1 cup diced cooked pumpkin
- 2 eggs, lightly beaten
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper, to taste
Instructions:
1. Heat the vegetable oil in a large skillet over medium-high heat.
2. Add the garlic and cook until fragrant, about 30 seconds.
3. Add the chicken and pumpkin and cook until lightly browned, about 5 minutes.
4. Add the cooked rice and stir to combine.
5. Push the rice mixture to the sides of the skillet and pour the beaten eggs into the center.
6. Cook the eggs until they are just set, stirring occasionally.
7. Stir the eggs into the rice mixture.
8. Add the soy sauce and sesame oil and season with salt and pepper, to taste.
9. Cook, stirring occasionally, until the rice is heated through, about 5 minutes.
10. Serve warm. Enjoy!
