Pumpkin Spaghetti with Jamon and Chia Seeds

Ingredients:

-7 eggs
-1/2 lb spaghetti
-1/2 cup pumpkin, cubed
-1/2 teaspoon chilli flakes
-2 tablespoons chia seeds
-2 tablespoons butter
-2 tablespoons olive oil
-4 ounces jamon, diced

Instructions:

1. Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, about 8-10 minutes. Drain and set aside.

2. In a large skillet, heat the butter and olive oil over medium heat. Add the jamon and cook until lightly browned, about 3 minutes.

3. Add the pumpkin cubes and chilli flakes and cook for an additional 3 minutes.

4. Add the cooked spaghetti to the skillet and stir to combine.

5. In a separate bowl, whisk together the eggs and chia seeds.

6. Pour the egg mixture into the skillet and stir to combine. Cook until the eggs are set, about 5 minutes.

7. Serve the pumpkin spaghetti with jamon and chia seeds warm. Enjoy!
