Pumpkin Spinach Fritters
Ingredients:
-1 cup pumpkin puree
-1 egg
-1/4 teaspoon black pepper
-1 cup spinach, chopped
-1/2 cup all-purpose flour
-1/2 teaspoon salt
Instructions:
1. In a medium bowl, mix together the pumpkin puree, egg, black pepper, spinach, flour, and salt until combined.
2. Heat a large skillet over medium-high heat and add a tablespoon of oil.
3. Using a large spoon, drop spoonfuls of the pumpkin mixture into the skillet.
4. Cook for 2-3 minutes on each side, or until golden brown.
5. Serve warm with your favorite dipping sauce. Enjoy!
