Quail with Coconut Oat Bran Stuffing

Ingredients:

- 4 quail
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup Brussel sprouts, chopped
- 1 cup Swiss chard, chopped
- 1 apple, diced
- 1/2 cup oat bran
- 1/2 cup shredded coconut
- Salt and pepper, to taste

Instructions:

1. Preheat oven to 375°F.

2. Heat olive oil in a large skillet over medium heat. Add onions and garlic and cook until softened, about 5 minutes.

3. Add Brussel sprouts, Swiss chard, and apple and cook for an additional 5 minutes.

4. Remove from heat and stir in oat bran and coconut. Season with salt and pepper, to taste.

5. Stuff quail with the oat bran mixture and place in a baking dish.

6. Bake for 30 minutes, or until quail is cooked through.

7. Serve and enjoy!
