Quinoa and Black Bean Salad
Ingredients:
-1/2 cup of cooked quinoa
-1/2 cup of cooked black beans
-1/4 cup of diced red onion
-1/4 cup of diced bell pepper
-1/4 cup of diced tomatoes
-1/4 cup of chopped cilantro
-2 tablespoons of olive oil
-1 tablespoon of lime juice
-Salt and pepper to taste
Instructions:
1. In a large bowl, combine the cooked quinoa, black beans, red onion, bell pepper, tomatoes, and cilantro.
2. In a small bowl, whisk together the olive oil, lime juice, salt, and pepper.
3. Pour the dressing over the quinoa and bean mixture and toss to combine.
4. Serve the salad at room temperature or chilled. Enjoy!
