Make Quinoa and Vegetable Stuffed Peppers

Ingredients:
- 4 large bell peppers
- 1 cup red quinoa
- 2 cups water
- 1 tomato, diced
- 1/2 cup shredded cheese
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon soy sauce
- 1 tablespoon butter
- 1/2 cup milk
- 1 teaspoon vanillin
- 1/2 teaspoon baking soda
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Rinse the quinoa under cold water and drain.
3. In a saucepan, combine the quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the quinoa is cooked and the water is absorbed.
4. Cut the tops off the bell peppers and remove the seeds and membranes.
5. In a large bowl, mix together the cooked quinoa, diced tomato, shredded cheese, salt, pepper, soy sauce, and vanillin.
6. Stuff the bell peppers with the quinoa mixture and place them in a baking dish.
7. In a small saucepan, melt the butter over low heat. Stir in the milk and baking soda until well combined.
8. Pour the butter mixture over the stuffed peppers.
9. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes.
10. Remove the foil, sprinkle some extra cheese on top of the peppers, and bake for an additional 5-10 minutes until the cheese is melted and bubbly.
11. Serve the stuffed peppers hot and enjoy!
