Quinoa Chicken and Carrot Bowl

Ingredients:

-1 cup quinoa
-2 cups chicken broth
-1 lb. boneless, skinless chicken breasts, cut into cubes
-1 tablespoon olive oil
-1 teaspoon garlic powder
-1 teaspoon onion powder
-1 teaspoon paprika
-1 teaspoon dried oregano
-1/2 teaspoon salt
-1/4 teaspoon black pepper
-2 cups diced carrots
-1/4 cup chopped fresh parsley

Instructions:

1. In a medium saucepan, bring the quinoa and chicken broth to a boil. Reduce the heat to low, cover, and simmer for 15 minutes, or until the quinoa is cooked through.

2. Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the chicken cubes and season with garlic powder, onion powder, paprika, oregano, salt, and pepper. Cook for 8-10 minutes, stirring occasionally, until the chicken is cooked through.

3. Add the carrots to the skillet and cook for an additional 5 minutes, or until the carrots are tender.

4. To assemble the bowls, divide the quinoa among four bowls. Top each bowl with the chicken and carrots. Sprinkle with chopped parsley and serve. Enjoy!
