Make Quinoa Stuffed Capsicum
Quinoa Stuffed Capsicum
Ingredients:
- 2 large capsicums
- 1 cup quinoa
- 2 onions, diced
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon oregano
- Salt and pepper, to taste
- 1/2 cup grated cheese (optional)
Instructions:
1. Preheat oven to 350°F (175°C).
2. Cut the capsicums in half lengthwise and remove the seeds and membranes. Place the capsicums in a baking dish.
3. Cook the quinoa according to package instructions.
4. Heat the olive oil in a skillet over medium heat. Add the onions and garlic and cook until softened, about 5 minutes.
5. Add the cooked quinoa, cumin, paprika, oregano, salt and pepper to the skillet and stir to combine.
6. Spoon the quinoa mixture into the capsicums. Top with grated cheese, if desired.
7. Bake for 25-30 minutes, until the capsicums are tender.
8. Serve warm. Enjoy!
