Radish and Rugula Egg Salad
Ingredients:
- 2 cups of diced radishes
- 2 cups of Rugula
- 4 hard boiled eggs, diced
- 1/4 cup of Sauerkraut
- 2 tablespoons of olive oil
- 2 tablespoons of white wine vinegar
- Salt and pepper to taste
Instructions:
1. In a large bowl, combine the diced radishes, Rugula, and hard boiled eggs.
2. Add the Sauerkraut and mix until all ingredients are combined.
3. In a small bowl, whisk together the olive oil, white wine vinegar, salt, and pepper.
4. Pour the dressing over the salad and mix until everything is evenly coated.
5. Serve chilled or at room temperature. Enjoy!
