Raspberry Vodka Cupcakes

Ingredients:

- 3 eggs
- 1/2 cup vegetable oil
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 2 tablespoons raspberry vodka
- 1/2 cup icing sugar

Instructions:

1. Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin with oil or butter.

2. In a large bowl, whisk together the eggs, oil, and sugar until light and fluffy.

3. In a separate bowl, sift together the flour, baking powder, and icing sugar.

4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

5. Add the raspberry vodka and stir until just combined.

6. Divide the batter evenly among the muffin cups.

7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

8. Allow to cool for 10 minutes before removing from the tin.

9. Serve warm or at room temperature. Enjoy!
