Ratatouille Frittata
Ingredients:
- 6 eggs
- 2 cups of ratatouille
- 2 tablespoons of olive oil
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
Instructions:
1. Preheat oven to 375°F.
2. Heat olive oil in a large oven-safe skillet over medium heat.
3. Add ratatouille to the skillet and cook for 5 minutes, stirring occasionally.
4. In a medium bowl, whisk together eggs, salt, and pepper.
5. Pour egg mixture into the skillet and stir to combine with the ratatouille.
6. Cook for 5 minutes, stirring occasionally.
7. Place skillet in preheated oven and bake for 15 minutes, or until the eggs are set and golden brown.
8. Serve warm. Enjoy!
