Recipe: Afghani Pulao
Ingredients:
- 2 cups basmati rice
- 1 lb lamb or beef, cut into small pieces
- 1 large onion, thinly sliced
- 1/2 cup vegetable oil
- 1/2 cup raisins
- 1/2 cup slivered almonds
- 1/2 cup shredded carrots
- 1/2 tsp ground cardamom
- 1/2 tsp ground cinnamon
- 1/2 tsp ground cloves
- Salt and pepper to taste
- 4 cups water
Instructions:
1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
2. In a large pot, heat the vegetable oil over medium heat. Add the sliced onions and cook until golden brown.
3. Add the meat pieces to the pot and brown on all sides.
4. Add the drained rice to the pot and stir well to combine with the meat and onions.
5. Add the raisins, almonds, carrots, cardamom, cinnamon, cloves, salt, and pepper to the pot. Mix everything together.
6. Pour the water over the rice mixture and bring to a boil.
7. Reduce the heat to low, cover the pot, and let the pulao simmer for about 30-40 minutes, or until the rice is cooked and the liquid is absorbed.
8. Fluff the rice with a fork before serving.
9. Serve the Afghani Pulao hot with yogurt or a side salad.
