Recipe: Cheesy Chicken Fried Rice
Ingredients:
- 2 cups cooked rice
- 1 cup cooked chicken, diced
- 2 eggs, beaten
- 1/2 cup shredded cheese
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- 1/2 cup peas
- 1/2 cup diced carrots
Instructions:
1. In a large skillet, heat some oil over medium heat.
2. Add the beaten eggs and scramble them until cooked through. Remove from the skillet and set aside.
3. In the same skillet, add the diced chicken and cook until heated through.
4. Add the peas and carrots to the skillet and cook until slightly softened.
5. Add the cooked rice to the skillet and stir to combine with the chicken and vegetables.
6. Season with salt and pepper, adjusting to taste.
7. Add the scrambled eggs back to the skillet and mix everything together.
8. Sprinkle the shredded cheese over the top and cover the skillet to melt the cheese.
9. Once the cheese is melted, remove from heat and serve hot.
