Ingredients:
- 1 summer squash, thinly sliced
- 1 cup butternut squash, diced
- 1 red pepper, diced
- 6 eggs
- 1 cup shredded cheese (cheddar or mozzarella)
Instructions:
1. Preheat the oven to 350°F (180°C).
2. In a large skillet, sauté the summer squash, butternut squash, and red pepper until they are tender, about 5-7 minutes.
3. In a mixing bowl, whisk the eggs together.
4. Pour the whisked eggs over the sautéed vegetables in the skillet.
5. Sprinkle the shredded cheese on top of the egg and vegetable mixture.
6. Cook on the stovetop over medium heat for 3-4 minutes until the edges start to set.
7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is cooked through and the cheese is melted and bubbly.
