Recipe: Chicken and Rice Casserole
Ingredients:
- 1 cup of rice
- 2 chicken breasts
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 cup of chicken broth
- 1 cup of milk
- 1 cup of shredded cheddar cheese
- Salt and pepper to taste
- Olive oil
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Cook the rice according to package instructions and set aside.
3. In a large skillet, heat some olive oil over medium heat.
4. Season the chicken breasts with salt and pepper, then add them to the skillet and cook until browned on both sides. Remove the chicken from the skillet and set aside.
5. In the same skillet, add the diced onion and minced garlic. Cook until the onion is translucent.
6. Add the chicken broth and milk to the skillet and bring to a simmer.
7. Stir in the cooked rice and half of the shredded cheddar cheese.
8. Slice the cooked chicken breasts and place them on top of the rice mixture.
9. Sprinkle the remaining cheddar cheese on top.
10. Cover the skillet with foil and bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
11. Serve hot and enjoy your delicious Chicken and Rice Casserole!
