Recipe: Chicken and Tomato Rice
Ingredients:
- 1 lb chicken breast, diced
- 1 cup rice
- 3 cloves garlic, minced
- 1 onion, chopped
- 1 bell pepper, diced
- 2 tomatoes, diced
Instructions:
1. In a large skillet, heat some oil over medium heat.
2. Add the diced chicken and cook until browned on all sides.
3. Add the minced garlic, chopped onion, and diced bell pepper to the skillet. Cook until the vegetables are softened.
4. Stir in the diced tomatoes and cook for a few more minutes.
5. Add the rice to the skillet and stir to combine with the chicken and vegetables.
6. Pour in enough water or chicken broth to cover the rice and bring to a simmer.
7. Cover the skillet with a lid and let the rice cook for about 20 minutes, or until the liquid is absorbed and the rice is tender.
8. Fluff the rice with a fork and serve hot.
