Recipe: Chicken Biryani

Ingredients:
- 2 cups basmati rice
- 500g chicken, cut into pieces
- 1 large onion, thinly sliced
- 2 tomatoes, chopped
- 1/2 cup plain yogurt
- 2 tablespoons biryani masala
- 1 tablespoon ginger-garlic paste
- 1/4 cup chopped fresh coriander leaves
- 1/4 cup chopped fresh mint leaves
- 4 cups water
- 4 tablespoons ghee or oil
- Salt to taste

Step by Step Guide:
1. Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
2. In a large pot, heat ghee or oil over medium heat. Add the sliced onions and sauté until golden brown.
3. Add the chicken pieces and cook until they are no longer pink.
4. Stir in the biryani masala and ginger-garlic paste, and cook for another 2 minutes.
5. Add the chopped tomatoes, yogurt, coriander leaves, and mint leaves. Cook for 5 minutes.
6. Add the soaked rice and water to the pot. Season with salt and bring to a boil.
7. Reduce the heat to low, cover the pot, and let the biryani simmer for 20-25 minutes or until the rice is cooked and the chicken is tender.
8. Fluff the biryani with a fork and serve hot with raita or salad.
