Recipe: Hearty Beef Stew
Ingredients:
- 1 lb stew beef, cubed
- 8 oz mushrooms, sliced
- 2 large potatoes, peeled and diced
- 2 large carrots, peeled and sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine (optional)
- 2 tbsp tomato paste
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs for garnish (such as parsley or thyme)
Instructions:
1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the stew beef and brown on all sides, about 5 minutes.
2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent, about 3 minutes.
3. Stir in the sliced mushrooms and cook for another 5 minutes, allowing them to release their juices.
4. Pour in the beef broth and red wine (if using). Add the tomato paste, potatoes, and carrots. Season with salt and pepper.
5. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through.
6. Taste and adjust seasoning if needed. Serve hot, garnished with fresh herbs.
