Recipe: Jambalaya

Ingredients:
- 1 lb chicken breast, diced
- 1 lb smoked sausage, sliced
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup long grain white rice
- 2 cups chicken broth
- 1 tsp paprika
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- Green onions, chopped (for garnish)
- Fresh parsley, chopped (for garnish)

Step by Step Guide:
1. In a large pot or Dutch oven, heat some oil over medium-high heat. Add the diced chicken and smoked sausage, and cook until browned.
2. Add the chopped onion, bell pepper, celery, and garlic to the pot. Cook until the vegetables are softened.
3. Stir in the diced tomatoes, rice, chicken broth, paprika, oregano, thyme, cayenne pepper, salt, and pepper. Bring the mixture to a boil.
4. Reduce the heat to low, cover the pot, and let the jambalaya simmer for about 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
5. Once the jambalaya is ready, remove it from the heat and let it sit for a few minutes before fluffing it with a fork.
6. Serve the jambalaya hot, garnished with chopped green onions and fresh parsley.
