Ingredients:
- 1 bell pepper
- 1 eggplant
- 1 salmon fillet
- 1/4 cup olives
- 1 tomato
- 1 zucchini

Instructions:
1. Preheat the oven to 400°F (200°C).
2. Cut the bell pepper, eggplant, tomato, and zucchini into bite-sized pieces.
3. Place the chopped vegetables on a baking sheet and drizzle with olive oil. Season with salt and pepper.
4. Roast the vegetables in the preheated oven for 20-25 minutes, or until they are tender and slightly caramelized.
5. While the vegetables are roasting, season the salmon fillet with salt and pepper.
6. Heat a skillet over medium heat and add the salmon fillet, skin side down. Cook for 4-5 minutes on each side, or until the salmon is cooked to your desired level of doneness.
7. Once the salmon is cooked, remove it from the skillet and set aside.
8. To serve, place the roasted vegetables on a plate, top with the cooked salmon, and garnish with olives.
