**Ingredients:**
- 1 cup of rice
- 1 lb of chicken breast, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 can of diced tomatoes
- 1 cup of chicken broth
- 1 teaspoon of paprika
- 1 teaspoon of dried thyme
- Salt and pepper to taste
- 1 cup of shredded cheese

**Instructions:**
1. Preheat the oven to 375°F (190°C).
2. In a large skillet, heat some oil over medium heat and sauté the onions, garlic, and bell pepper until softened.
3. Add the diced chicken breast to the skillet and cook until browned on all sides.
4. Stir in the rice, diced tomatoes, chicken broth, paprika, thyme, salt, and pepper. Bring to a simmer.
5. Transfer the mixture to a casserole dish and cover with foil.
6. Bake in the preheated oven for 25-30 minutes, or until the rice is cooked and the chicken is tender.
7. Remove the foil, sprinkle the shredded cheese on top, and bake for an additional 5-10 minutes until the cheese is melted and bubbly.
