**Ingredients:**
- 1 cup of rice
- 1 lb of chicken breast, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 can of cream of mushroom soup
- 1 cup of chicken broth
- 1 cup of frozen peas
- 1 cup of shredded cheddar cheese
- Salt and pepper to taste
- Olive oil

**Instructions:**
1. Preheat the oven to 375°F (190°C).
2. In a large skillet, heat some olive oil over medium heat.
3. Add the diced chicken breast and cook until browned on all sides.
4. Add the chopped onion and minced garlic to the skillet and cook until the onion is translucent.
5. Stir in the rice and cook for another 2-3 minutes.
6. Add the cream of mushroom soup and chicken broth to the skillet, stirring to combine.
7. Season with salt and pepper to taste.
8. Stir in the frozen peas.
9. Transfer the mixture to a casserole dish and cover with foil.
10. Bake in the preheated oven for 30 minutes.
11. Remove the foil, sprinkle the shredded cheddar cheese on top, and bake for an additional 10 minutes or until the cheese is melted and bubbly.
