Recipe: Paella de Mariscos
Ingredients:
- 1 cup arroz (rice)
- 1 green bell pepper (pimiento verde), diced
- 1 red bell pepper (pimiento rojo), diced
- 8-10 small squid (chipirones), cleaned and sliced into rings
- 1 cup shrimp (gambas), peeled and deveined
- 1 cup mussels (mejillones), cleaned and debearded
- 1 cebolleta (spring onion), chopped
- Salt and pepper to taste
- 1 cup tomato sauce (salsa de tomate)
- 1/2 cup white wine (vino blanco)
Instructions:
1. In a large paella pan or skillet, heat some olive oil over medium heat.
2. Add the diced green and red bell peppers, and cook until they start to soften.
3. Add the sliced squid (chipirones) and cook for a few minutes until they are slightly opaque.
4. Push the squid to one side of the pan and add the shrimp (gambas) and mussels (mejillones). Cook until the shrimp turn pink and the mussels start to open.
5. Stir in the chopped spring onion (cebolleta) and season with salt and pepper.
6. Add the rice (arroz) to the pan and stir to coat it with the juices from the seafood and vegetables.
7. Pour in the tomato sauce (salsa de tomate) and white wine (vino blanco). Stir well to combine.
8. Cover the pan with a lid or aluminum foil and let the paella simmer for about 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
9. Remove from heat and let it rest for a few minutes before serving.
