Recipe: Pescado Veracruzano

Ingredients:
- 4 tomatillos
- 2 papas
- 1 cup ejotes (green beans)
- 1 lb pescado (fish)
- 1/2 cebolla morada (red onion)

Instructions:
1. Start by preparing the tomatillo sauce. Remove the husks from the tomatillos and rinse them under cold water. Place them in a blender along with a quarter of the red onion and blend until smooth.
2. Peel and dice the papas into small cubes. Trim the ends of the ejotes and cut them into bite-sized pieces.
3. In a large skillet, heat some oil over medium heat. Add the remaining chopped red onion and sauté until translucent.
4. Add the diced papas and ejotes to the skillet and cook until slightly tender.
5. Place the pescado fillets on top of the vegetables in the skillet. Pour the tomatillo sauce over the fish and vegetables.
6. Cover the skillet and let the dish simmer for about 15-20 minutes, or until the fish is cooked through and the vegetables are tender.
7. Serve the Pescado Veracruzano hot, garnished with fresh cilantro and a squeeze of lime juice.
