Recipe: Pollo con Chile Poblano, Champiñones y Queso
Ingredients:
- 1 lb chicken breast (Pollo)
- 2 chile poblanos
- 8 oz mushrooms (Champiñones)
- 1 cup shredded cheese (Queso)
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Roast the chile poblanos over an open flame or under the broiler until the skin is charred. Place them in a plastic bag to steam for 10 minutes, then peel off the skin, remove the seeds, and slice into strips.
3. Slice the chicken breast into thin strips and season with salt and pepper.
4. In a skillet, cook the chicken strips until browned and cooked through. Remove from the skillet and set aside.
5. In the same skillet, add sliced mushrooms and sauté until they are tender.
6. Add the roasted chile poblano strips back to the skillet with the mushrooms.
7. Layer the cooked chicken on top of the mushrooms and chile poblanos.
8. Sprinkle the shredded cheese over the chicken and vegetables.
9. Place the skillet in the preheated oven and bake for about 15-20 minutes, or until the cheese is melted and bubbly.
10. Serve the Pollo con Chile Poblano, Champiñones y Queso hot with rice or tortillas.
