Recipe: Potato Gnocchi with Caramelized Onions
Ingredients:
- 2 large potatoes
- 1 cup flour
- 1/2 tsp salt
- 1 onion
- 2 tbsp oil
Instructions:
1. Peel and boil the potatoes until they are soft. Drain and mash them in a bowl.
2. Add the flour and salt to the mashed potatoes, and knead until a dough forms.
3. Divide the dough into small portions and roll each portion into a long rope. Cut the rope into small gnocchi-sized pieces.
4. Bring a pot of water to a boil and add a pinch of salt. Cook the gnocchi in batches until they float to the surface, then remove them with a slotted spoon and set aside.
5. In a separate pan, heat the oil over medium heat. Add the sliced onion and cook until caramelized.
6. Add the cooked gnocchi to the pan with the caramelized onions and toss to combine.
7. Serve the potato gnocchi with caramelized onions hot and enjoy!
